- 1 large onion - chopped
- 1 courgette - chopped
- 8 - 10 eggs
- 1 tbsp olive or rapeseed oil
- Salt and pepper
- Little cheese finely grated - cheddar, parmesan or similar hard cheese
- Few sprigs of rosemary finely chopped
This courgette tortilla recipe came about when my son and I we were hunting around the cupboards and fridge for something to cook for tea. We found a courgette and some eggs and decided to give this a go. It turned out to be a very quick and easy tea which everyone enjoyed.
We were looking for potatoes to add as that would have been perfect however there were none in the house but we’ll try them next time.

My 7 year old son did all of the stirring in the pan, got very chefy putting the sea salt in – he’s been watching Jamie Oliver recently! – and broke the eggs in. I helped with the chopping and putting in the oven. It was great to see how chuffed he was when we served it up and everyone was complementing on how great it tasted… “Daddy and I cooked that!”
Instructions
- Pre heat the oven to 200C
- Heat oil in a large, oven proof frying pan
- Fry the onions for a few minutes then add the courgettes and rosemary and cook for 5 minutes or so until the vegetables start to take on a bit of colour
- Add a good pinch of salt and pepper
- Break the eggs into the pan and mix them round (you can break them into a bowl and mix first if you prefer) – they will begin to cook
- Top with the grated cheese
- Place in the oven and bake for 5 or 10 minutes until the top start to brown and the egg is set. – you could also finish it off this under the grill
