Berry Compote

Whenever there are deals on frozen fruit in the supermarket, I stock up and pop them in the freezer. We love this recipe and make it regularly as it's so versatile. It's great on top of breakfast pancakes, on top of porridge (it's the only way I can get my son to eat it!), as a topping for french toast and also to flavour natural yogurt for a tasty dessert.

Two 125g packets of frozen fruits

1 tablespoon orange or apple juice

2 teaspoons granulated sugar


Empty two packets of frozen fruits into a small saucepan

Add the juice (you can omit this if the fruit isn't frozen)

Add the sugar and mix

Bring to the boil

Turn heat down a little but keep bubbling for about 5 - 10 minutes until it becomes a thicker liquid, more gloopy like mixture

Cool ready for use (will stay fresh in fridge for up to 4 days)

The kids can make this on their own but get them to be careful when bringing the fruit to the boil as if it spits, it is very hot.
