We LOVE these muffins, they're so easy to bake with the kids and they really like taking them to school in their lunchboxes. Thanks to Irish chef Catherine Fulvio for inspiring us with her blueberry muffin recipe...

Ingredients

250g/9oz Plain Flour

150g/5oz Butter (melted & cooled)

150g/5oz Light Brown Sugar

150ml/¼pt. Milk

1 Egg

1 Teaspoon Baking Powder

Pinch of Cinnamon

Pinch of Salt

250g/9oz Frozen Fruit, e.g. Blueberries, Raspberries

Directions

Preheat oven to 200°C (400°F)

Put liners into muffin tray

Place the melted butter, sugar, milk and egg into a bowl and beat well until combined

In a separate bowl mix together the flour, baking powder, cinnamon and salt

Add the liquid mixture to the dry ingredients and stir until 'just' combined

Gently fold in the frozen fruit

Divide the mixture evenly between the 12 muffin cases

Bake in a central position in the oven for about 25 minutes

The kids like to get involved in putting the liners in the muffin tray, mixing the ingredients, filling the muffin cases and eating them of course!
