This is a meal that is perfect for those busy mid week evenings as you can prepare the batter in advance to save time.

I always try to make twice the amount so that the kids can have a small portion with salad in their lunchbox the next day at school.

Ingredients

Quarter pint (150ml) water

Quarter pint (150ml) milk

2 eggs

4oz (115g) plain flour

Pinch salt

Olive oil (or lard or dripping to be traditional!)

12 Good quality (at least 80%) pork sausages

Directions

Heat the oven to a high temperature 200c

Put all of the ingredients in a blender and whisk well until the batter is smooth and light. Leave this for as long as possible before cooking, ideally 2-3 hours and at least 30 minutes for the batter to rest

Put the oil in the roasting tin (just enough to cover the bottom) and place in the oven until really hot (starting to smoke)

Carefully remove the tray from the oven and lay the sausages in the oil immediately and straight after pour over the batter and replace back in the oven

Cook for at least 25-30 minutes without opening the oven door and letting the heat out

Serve with peas or your favourite green vegetables

Add some dried sage and chopped onion into the batter for an interesting savoury twist

Try to use the same oven tray for this dish every time and just wipe it clean. Like a wok, it will become seasoned over time.
