I learned this bacon and rice recipe from my Mum. It's very quick to make and really delicious so Mum often made it when when we'd been out for the day and got back late starving.
The ingredients are variable and are guesstimates so you can vary to taste.
Mum has always called this dish rice surprise but to this day I've never worked out what the surprise was - it would be a surprise if there was no rice I suppose...
Granny's really quick, easy and tasty dinner, perfect when you've not much time. What's the surprise though?

Get the rice on to cook as per the instructions on the packet
Heat oil in a saucepan and fry the onion and bacon for 5 minutes or so
Add the chopped tomatoes, frozen peas, salt, pepper and tomato puree - add peas later if using fresh
Bring to a simmer and add the chives
Cook for 5 minutes or so until the peas are cooked
Serve with the rice
Under supervision, our kids can stir the pan and our 9 year old can carefully chop bacon and onions. We send our children to the garden to get the chives.
