Now these are very special indeed. They are rich and luxurious and you certainly wouldn't have them everyday! They are easy and messy and scrummy and make the absolute perfect present any time of year. We always make these for teachers at the end of the school year and grandparents at Easter and Christmas. The secret is to get good quality chocolate, minimum 70% cocoa if possible.
Rich, divine, luxurious chocolate truffles - perfect presents or an after dinner treat.

Break up the chocolate into a medium sized bowl
Put the butter and cream into a saucepan and heat very gently until the butter melts and the cream is simmering
Pour over the chocolate and stir together until smooth
If you want to have different flavours, now is the time to split the mixture into a couple of different bowls
Cover the bowl(s) with clingfilm and put in the fridge for at least 4 hours, overnight is ideal.
Using a teaspoon, drag over the top of the mixture and then shape into a ball in your hand (this is very messy if your kids hands are very warm!)
Then dip your balls into whatever coating you like, some suggestions are below:
Place truffles onto tray with baking parchment paper and place back in fridge
Place in airtight container back in fridge for 3 days or freeze for a month
If giving as presents, keep in fridge until needed
The kids will have a field day making these, be prepared for very messy fingers and possible sore tummies if they eat more than they shape! I always get my kids to whistle when they're making them to prevent such a situation!

- Plain truffles coated with coconut
