Sick and tired of the usual pasta, rice or potatoes? I know that we are, and I was looking to try something new. I got the kids to help me empty out the kitchen cupboards to see what was lurking back there and we found an unopened bag of couscous that was luckily still in date!
Not really sure what to do with this, we decided to roast whatever veg was hanging about and 'cook' the couscous. Mixed together, they were a delicious combo that even had the kids asking for more!

Preheat the oven to 180 C (356 F)
Chop the veg into large chunks
Place on oven tray and drizzle with olive oil and a sprinkling of chopped thyme
Roast veg for approx 40 mins
Turn the veg halfway through cooking
Meanwhile, boil the kettle or heat 1 litre of chicken stock
Place 250g of couscous in bowl and pour over water (or stock)
Stir and cover with clingfilm for 10 mins
Remove clingfilm and fluff with fork
Chop parsley and mix into couscous
Tip roasted veg into bowl, stir and serve.
Well, the kids can help out with chopping up the veg here and mixing it all up when they've drizzled olive oil over the veg. Slightly older kids can weigh out the couscous on the scales and help mix the lot together at the end.
