These Dubliner Vintage Cheese Straws are the perfect savoury snack to serve at a festive party or a moreish late night treat to be enjoyed with a glass of wine or beer when the kids have gone to bed. The extra mature full bodied sweet and nutty taste of the Dubliner Vintage Cheddar Cheese makes these rich and buttery cheese straws the perfect savoury snack.

 375g plain flour
 225g cold butter, cut into small squares
 Pinch salt
 2 medium egg yolks
 200g block of Dubliner Vintage Cheese, grated
 Pinch mustard powder (optional)
 Pinch cayenne pepper (optional)

Using a food processor (with a dough hook attachment), mix the plain flour, salt and butter. Alternatively, you can do this by hand by rubbing the butter between your fingertips


When the mixture looks like breadcrumbs, mix in the grated cheese and egg yolks


For a little kick, add in the cayenne pepper and mustard powder


Add in 4 tablespoons of cold water


Continue mixing until you have a firm dough consistency


Wrap the dough in clingfilm and leave in fridge for half an hour


Preheat the oven to 180C


Remove clingfilm and roll out dough to a square shape approx 10mm thickness


Cut the square in half and then cut each half into approx 1cm wide strips


Using a spatula, place the strips onto a flat baking sheet (lined with parchment paper)


Bake for 10-15 mins until crisp and golden brown


Remove from oven and leave on tray to cool a little before transferring to wire rack


Can be stored in a sealed container (with some parchment paper) and will stay fresh for 4 days


When baked and cooled, the cheese straws can be frozen to be enjoyed at a later date
