At Easter time, most people start thinking about chocolate, us included. In the past we have made the traditional Easter chocolate nests but that involves buying a big box of Shredded Wheats and we don't really buy boxed cereal so we end up using a few of the biscuits from the box and the rest of the cereal is wasted so this year I was determined to try something different and a little bit healthier.
We think 'Everything in moderation' and this is important at Easter time when people start thinking about chocolate. This year we decided to make a healthy version of our favourite Easter chocolate nests.
Place cases in bun tray
Melt the coconut oil and honey in a medium sized saucepan
Add in the cacao powder and stir to remove any lumps
Stir in the oats, dessicated coconut and ground almonds
Spoon into bun cases
Using back of spoon, shape a hole in the middle for the nest
Place in fridge for at least an hour to harden
Remove and add raspberries and blueberries
What can the kids do?
Be careful when melting the coconut oil as it can spit but the kids can help with everything else here
