My eldest daughter, who was 8 at the time, went on a week long summer cookery camp at Source Sligo Cookery School. The cookery school is run by Eithna O'Sullivan, an excellent chef and teacher who has run her own restaurant in the past.
One of the recipes was corn fritters so I'll hand you over to my daughter to explain how to cook them....
Corn fritters are easy to make & very tasty. You can do it yourself if you're 8 or older. Be careful when cooking because it's hot!
My Dad had not tasted corn fritters before when I cooked them at home for him he absolutely loved them - so I hope you do too!
Ellen learned how to make these when she was 8 at a local cookery school - try them with your kids.

Break both eggs into a medium bowl
Use a sieve to sieve the flour
Put in the milk
Mix together with a fork
Add sweet corn- salt & pepper
Mix again
Heat the oil in a frying pan
Add a little bit of butter -when it sizzles it is hot enough
Put 3 tbsps of mixture into the frying pan to make 3 fritters
Cook for 3 minutes until firm & brown on the bottom
Use a spatula to turn them over & cook for another 3 minutes
Drain on kitchen paper
Keep in a warm place
Cook the rest of the fritters in the same way
Variations
You can add other things in the corn fritters such as
- Peas
- Ham
- Cheese
- Grated corguettes
