Garlic mushrooms on toast is a favourite lunch or supper in our house and are really quick and easy to make.

Peel the mushrooms and wipe them with kitchen paper towel (don't wash them as they retain the water and then release it in the pan). Slice the mushrooms. Don't throw the mushroom skins and kitchen towel in the bin - they makes great compost
Peel and roughly chop the garlic
Heat a large non-stick frying pan and add the butter and oil when hot
Fry the mushrooms for 4-5 minutes until they soften - you can pour off any juice
Add the garlic and fry for 2-3 minutes
Add the parsley, roughly chopped
Serve on lightly buttered toast or toasted ciabatta bread
The children can help with most of this recipe. They can peel and chop the mushrooms (with their special kid's knife if they are quite young), put the bread in the toaster and butter the toast.
