You'd never know these light, delicious and amazing cookies were gluten free!

gluten free ginger cookies recipe

 225g butter
 175g caster sugar
 2 eggs lightly beaten
 225g (8oz) marg/butter (room temp)
 175g (6oz) caster sugar
 2 eggs lightly beaten
 350g (12oz) gluten free self-raising flour
 1/4 tsp gluten free baking powder
 pinch of bread soda
 60g crystallised ginger

Cream the butter and the sugar in a bowl until light and fluffy

Add in the beaten eggs, one at a time and combine well

Add in sieved flour and baking powder and bread soda

Add finely chopped ginger

Chill for 20-30 minutes

Pre-heat oven to 180C mark 5

Lightly flour two baking trays with gluten free flour

Shape mix into pin ball size pieces (do not place too near to each other or they will stick!)

Place in the oven and bake for about 15 minutes - though check often to make sure they don't overcook

When cooked remove from over and place cookies on wire rack to cool before placing in air tight container
