Don't buy packet mix, additive-ladened fajita flavouring when making your own is simple, cheaper and much more tasty.
Pre heat an oven to 180 c
Wrap the tortillas in foil, sprinkling a little water on the top tortilla before wrapping
Put the tortilla parcel in the oven and cook for about 15 minutes
Whilst the tortillas are warming, mix the onion, pepper and chicken in a large bowl with the oil and spices
Heat a large frying pan on the hob and add the oil - it needs to be hot so the food sizzles when it goes in
Add the contents of the bowl into the pan and cook, turning frequently to avoid it burning, for about 8 minutes until it starts browning
Don't put too much in the pan at once so cook in batches, keeping the cooked batches warm, if there is too much - this helps them cook better
Serve up by putting some of the fajitas on a tortilla with the salsa, guacamole and sour cream to taste
