I saw these sausage and apple sandwiches on Hugh Fearnley-Whittingstall's River Cottage programme in an episode where he was trying to get a chap to eat cooked apples. They looked delicious so we gave them a go. It turned out they were fantastic and also the kids loved them.
I'm not suggesting this is a good way of getting the kids to eat fruit, or that it's healthy (everything is fried after all, mind you these things in moderation are fine), it's just a tasty recipe and one that's a bit different.
We're quite picky about our sausages and always make sure we get ones that are a minimum of 80% pork - if we can't get them we don't buy them. You have to ask yourself what goes into the ones with less than 80% pork?
Pork and apples are a great combination but how about in a good old sausage sandwich?
Fry the sausages in a frying pan with a little oil until brown all over and place to one side
While the sausages are cooking, core, peel and slice the apples into fairly thin wedges and place them in a bowl with the lemon juice - this prevents them browning
After you have taken the sausages out of the pan, place the apples in and fry them for a few minutes on each side until they brown
Place the sausages on buttered brown bread with slices of apple on the top and enjoy
I got the kids squeezing the lemon, peeling and chopping the apples and covering them in lemon juice.
