This quick and easy tangy tomato pasta sauce is a twist on a family favourite and needs very few ingredients.

Put a medium saucepan on the hob and warm the olive oil in it.
Finely chop the onion. When the oil is warm enough, add the onion, stirring continuously till the onion becomes translucent.
After a few minutes, add the balsamic vinegar. It'll bubble a bit so be warned.
Add the chopped tomatoes. Simmer for about 15 minutes.
Season to taste.
Blitz with a hand blender for a smoother consistency.
Add to cooked pasta.
Sprinkle with some fresh basil (optional).
Serve... simple as that!
Kids may have trouble cutting the onion but if you're using fresh tomatoes they can certainly cut up those, preferably with a child friendly knife. They can also help with the stirring of the sauce.
Optional Extras
You can add anything in this sauce. If you are going to add something like mushrooms, peppers or prawns, I would recommend adding them before you add the tomatoes.
If you can't get hold of plum tomatoes and only have chopped tomatoes, you may have to add a tiny pinch of sugar.
You could easily double or triple this recipe and freeze the leftovers. This sauce is lovely on it's own with some garlic bread or with homemade potato wedges. It's also tasty with fish or meatballs.
Add some chilli flakes after step 4 for some added spice!
You don't have to blitz it if you'd like a chunkier sauce.
