Whoopie Pies

The kids have been getting into Blue Peter recently (remember that??) and got an Annual out of the library where they found this Whoopie Pie recipe. They were really keen to give it a go so we left the three of them to it.

Apparently Whoopie Pie recipes originate from the Amish community in rural America and were so named because when Amish men found them in their lunchboxes at work the cried "Whooopppeeee!"

 80g margarine or butter
 1 egg
 100g brown sugar
 200g plain flour
 20g unsweetened cocoa
 1tsp baking powder
 1tsp bicarbonate of soda
 Pinch of salt
 1tsp vanilla extract
 100ml milk
 Marshmallow fluff or squirty cream

Get three mixing bowls ready

In the first bowl mix the butter, sugar and egg together to get a smooth mixture

In the second bowl, mix the cocoa,, flour, baking powder, soda and salt

In the third bowl, mix the milk and vanilla extract

Whisk a little of the second bowl (dry mixture) into the first bowl (butter mixture)

Add a little of the third bowl (milk) into the first bowl and whisk again

Keep repeating steps 5 and 6 until all the mixtures are combined

Drop spoons of the mixture onto greased baking sheets (we tried baking parchment)

Bake in the oven at 160c for 10 - 15 minutes

Once the cakes are completely cooled, take two and stick them together using the squirty cream or marshmallow fluff

You can even decorate them with sprinkles and more cream

The kids did absolutely everything on this except for putting the trays in the oven and taking them out. They even cleaned up afterwards - "a good chef is a tidy chef" apparently!
